Eric: I can easily say that I’m the polar opposite of my brother when it comes to my appreciation (and admiration) for everything onion; I’ve been known on occasion to eat a red onion like an apple. For me, this flavor doesn’t mask the taste of the food I pair with; rather it enhances. What I can agree on is that onion in its cooked form, whether sautéed, fried, baked or grilled, is even that much better.
