The Beech at The Hilton Bonnet Spring, Orlando

Hotel pool-side dining has come along way – at least the Hilton Bonnet Creek where I stayed in Orlando while at the Pillsbury Bake-Off earlier this year. While enjoying the warmth of the sun, my friend and I watched a waitress bring a tall, thin, covered clear plastic container tableside to another table, vigorously shake it and pour the contents into the bowls she had set out. I had to check it out.The shake-and-pour is the way the Beech Restaurant serves its chopped salad. The Copper Beech Inn Goes to the White House

Executive Chef Tyler Anderson of The Copper Beech Inn recently accepted an invitation from First Lady Michele Obama to travel to Washington and take part in the Chefs Move to Schools initiative, an opportunity for chefs around the country to adopt local schools to help solve the childhood obesity epidemic. I spent my college years in Philadelphia. The town is renowned for it's great food, from gourmet dining to the greatest selection of street food carts I've ever come across. I have to say though, despite it being available, 'healthy' is one of the last words I'd naturally associate to Philly food. My experience was one of fatty delights in my time; Philadelphia did rank amongst the nation's fattest towns then. It's funny how we think of the stuff we eat. The way we classify many foods in the U.S. is by its supposed ethnic background, it's even ingrained in the way we dine. Think about it, what are you in the mood for? French, Italian, Greek, Indian... we see a dish, we catalog its ingredients, and we assign a country of origin to it. What is funniest about this to me is that the foods we often associate with foreign countries are really more about America than anywhere else. Matt’s in the Market, Seattle

Arriving in Seattle late morning after having taken a nonstop from New York, I was starved. I had packed something for the food-less flight, but I needed to sit down for a meal and to get some fresh air. I checked into the Monaco on Fourth and heading toward Pike Place Market. Tilikum Place Cafe, Seattle

Not too far from Pike Place Market in Seattle is Tilikum Place Cafe with the unusual breakfast offerings of Chef Ba Culbert. I sampled one of the blackboard specials — a Dungeness Crabcake (with very little fillers) atop sliced avocado on an English muffin, served with crispy well-seasoned roasted potatoes some fruit and an unusually delicious cilantro, lemongrass hollandaise sauce ($15). Brunch at Sage American Bar & Grill

Dining by the water is a perk of living in Connecticut -- one that I take advantage of as often as possible. So when friends wanted to meet for brunch one spring Sunday - we opted for Sage American Bar & Grill in New Haven harbor.
