I believe in second chances.

The first time I tried Blue Water Grill, Steve Hanson’s seafood restaurant on Union Square, the server’s timing was way off.  He served the apps before the wine and placed the entrees on the table before we even finished our first course.

Must have been a fluke, I thought, and so I revisited with a friend.  We were intensely yakking and slowly nibbling our appetizers. For one, the tasty — albeit a bit greasy — shrimp & lobster spring roll, attractively presented in a basket along with two sauces: a spicy coconut sauce and mustard yuzu ($13.50). We also snacked on the crisp fried calamari mixed with some zucchini slices and served with a spicy tomato,  remoulade (12.50).

Oddly our server began cleaning our table as we were still eating, then removed our plates even though there were a few pieces left in the bowl as she had brought out our entrees and wanted to serve them.

I balked about the timing and she took them back to the kitchen. When finally served, my spicy shrimp tacos were no longer hot ($22), but the flour tortillas were already spread with guacamole and topped with the pineapple-jalapeño pico de gallo. My friend opted to eat the not-so-hot ($30) but tasty blackened swordfish over lump crab & sweet potato hash and a red curry sauce.

I can’t imagine that Steve Hanson’s policy is to rush people in and out.

My recommendation would be to advise your server that you want leisurely service and not to put your order for dinner in until after you’ve been served your apps. Honestly though that shouldn’t be the diner’s responsibility.
