A Truism Proven: Eat Slowly to Help Lose Weight

"Slow down," I'd recommend to people who scarfed down their foods. "You're not even tasting what you're eating. "And — by the way," I'd add, "You'll eat less if you do so." That platitude is now a proven fact -- at least according to researchers at the University of Rhode Island. Their study, reported in the July issue of the Journal of the American Dietetic Association, found that people who take small bites, putting down their fork between those bites and thoroughly chewing their food felt fuller and ate less than those who ate quickly. And, those who ate quickly consumed more food in a shorter period and weren't as [...]

Jalapeños, not Tomatoes, Now Prime Suspect

Today's front page of the Wall Street Journal (WSJ) reported that the officials investigating the salmonella outbreak have turned their focus to jalapeño peppers as the potential source of the rare salmonella strain dubbed Saintpaul that has sickened about 1,000 people since April 10. This food poisoning may have contributed to the death of one cancer patient. Investigators from the Centers for Disease Control and Prevention (CDC) are also looking at other ingredients used to make fresh salsa, including fresh cilantro and Serrano peppers. The CDC's initial blaming of tomatoes led to industry losses of hundreds of millions, according to the National Restaurant Association. So far nothing is conclusive, with [...]

Shrinking Starbucks — Stores, not Lattes

Starbucks — the world's largest coffee chain — announced yesterday that it would close 600 stores in the United States beginning this year, according to the New York Times. It will layoff more than 12,000 employees in the process, the most in its history. The coffee chain, like all retailers, is struggling from all the cavalcade of economic troubles, from imploding housing markets to rising gas prices, reports the New York Times. Americans Are Eating Better-for-You Foods Instead of Dieting

According to Supermarket News, the percentage of adults on a diet has decreased by 10 percentage points since 1990, while the number of Americans eating healthier has increased, according to NPD Group’s National Eating Trends report. The average American, according to National Eating Trends, has at least two better-for-you products a day. “While dieting for both women and men remain huge markets, they are not growing markets,” said Harry Balzer, vice president, the NPD Group, in a statement. “The desire to lose weight really was a 90s trend. Today consumers appear to be making healthier food choices. According to NPD, better-for-you products include reduced-fat, reduced-calorie, reduced-cholesterol, reduced-sodium, caffeine-free, fortified, organic, [...]

Tomato Ban at Aspen

Word has it that they've banned fresh tomatoes at the Aspen Food & Wine Classic - a food festival about to start its 26th year. Stay tuned to see whether I get an update. But don't try to go unless you already have tickets — its been sold out for some time. As you may have heard, there's a current out break of salmonella linked to tomatoes -- and federal health officials haven't yet traced the source of those salmonella-tainted tomatoes. By the way, canned tomato products are safe to eat as salmonella and other pathogens are killed at 145 degrees, according to the National Center for Food Safety & [...]

2008 International Festival of Arts & Ideas – Restaurant Tours

Experience New Haven (CT) restaurants with me this June as I will again be leading the festival's tasty tours. The festival — now about to begin its thirteenth year on June 14 — offers hundreds of events, over 85 percent of them free. Tickets for the incredibly popular New Haven restaurant tours with food demos, tastings and peeks into kitchens cost $40 a person, but have been virtually sold-out since the day after tickets went on sale. "Do come down and standby," suggests Andria Matthews, manager of community and ideas program. "You might be lucky as a couple spots often open up the day of the event." If you do [...]

Baked Apple BBQ

I don't know how the chefs did it. The temperature hovered around 98-degrees in Madison Square Park — and that was standing in the long lines, not near the blistering hot BBQ grills where the pitmasters did their craft. The crowds didn't seem to be fazed by the heat at the sixth annual celebration of mouthwatering barbecue — some waited hours to sample the foods that the 14 top pitmasters produced for the event. Smart New Yorkers purchased a $100 fast pass — the food equivalent of E-Z pass — that got them to the fast service area with a much shorter line. Worth it for the time savings alone. [...]

Tiny Fruit that Tricks the Tongue

It makes vinegar resemble apple juice and goat cheese taste like cheesecake. It's so bizarre that I just had share the info about this fruit on our site, it's too interesting not to... I habitually read the NYTimes Wednesday Dining Section and recently browsed "flavor tripping" parties, where guests eat a particular berry that temporarily rewires taste buds, turning sour flavors sweet "The miracle fruit, Synsepalum dulcificum, is native to West Africa and has been known to Westerners since the 18th century. The cause of the reaction is a protein called miraculin, which binds with the taste buds and acts as a sweetness inducer when it comes in contact with [...]

Brown Rice Gets its Whole-Grain Status

Although it has always been a whole grain, brown rice got recognized as such just this morning as the U.S. Food and Drug Administration (FDA) announced that it will join the recognized ranks of healthful whole grains and can be labeled as such. That means brown rice (as we've written about in Uncle Ben's and Steamfresh) can carry the FDA whole grain health claim: “Diets rich in whole grain foods and other plant foods and low in total fat, saturated fat and cholesterol may reduce the risk of heart disease and some cancers." As you know, our Dietary Guidelines recommend three daily whole grain servings. A simpler way to think [...]

New Product Preview: Tassimo Going Bosch

New product preview: This September, Bosch Household Appliances will launch a new Tassimo brewer (see the machine in our February 6, 08 Featured Bite). Seems that Procter & Gamble (P&G) acquired Braun, the current producer of the machines. Since Kraft (owner of Tassimo and manufacturer of what it brews) and P&G are coffee competitors the continued Braun-Kraft Tassimo partnership was ill advised. Those T DISC that we reviewed will not change and will be compatible with both the current Braun and future Bosch brewers. And, I've been told Braun will continue to provide full after-sales service to Tassimo consumers who own a Braun brewer. More as I learn about it [...]

The Humble Start-Up of the South Beach Festival

In 1997, about 450 people attended a Sunday afternoon "Florida Extravaganza," held on the Biscayne Bay campus of Florida International University (FIU). Before scheduling the date, the event organizers consulted the Miami Dolphin's schedule. "If there was a game, no one would come," explained Joe West, Dean of School of Hospitality and Tourism Management, FIU, the mastermind behind the food festival concept. The South Beach Wine & Food Festival (SOBE) — as it's been called since 2002 when it was relocated to South Beach and reinvented by Lee Brian Schrager, Director of Special Events at Southern Wine and Spirits — just hosted over 50 events with 35,000 attendees. It has [...]

Azul Restaurant, Mediterranean + Asian = Innovation

While in Miami last week for the South Beach Wine & Food Festival, I slipped across the causeway for a sampling of the creative cuisine of Clay Conley (a Todd English protégé) at Azul at the Mandarin Oriental hotel. Fine dining with service the way it should be - there when you need it, but not hovering. Don't let his boyish charm fool you, Clay Conley's mature talent comes through in each of his unpretentious dishes where he adds an Asian twist to Mediterranean flavors. Two of my favorite combinations included a delicate braised veal shank ravioli with caramelized onions, Parmesan cheese and black truffle butter. I opted to top [...]

Food Network’s Robin Miller Morphs Recipes on the Main Stage

"Morphing means to take a recipe (or part of a recipe) that you're already making, double it, and transform the extras into an entirely different meal," explained Robin Miller. She morphed one chicken dish into three others, with recipes from her cookbook "Robin Miller Quick Fix Meals" (The Taunton Press, 2007) on the main stage in the Grand Tasting Village at the South Beach Wine & Food Festival this past weekend. MAIN RECIPE: Roasted Chicken with Smokey Apricot Sauce Serves 4 TOTAL TIME: 45 minutes Prep time: 10 minutes Walk away time: 35 minutes Cooking spray 10 (5-ounce) skinless chicken breast halves (with bone) Salt and ground black pepper 1 [...]

The Moët & Chandon Bubble Q 2008 at the South Beach Festival

This past Friday evening's Bubble Q at the South Beach Wine & Food Festival offered free-flowing Moët & Chandon and incredible foods prepared by celebrity chefs. Lots of Bites of the Best at this event. Entering the tent, someone placed a lariat around my neck to hold my champagne glass so that my hands were free to eat! (You can sort of see this ingenious contraption in this photo of me and Parade's Fran Carpentier.) With both hands free to grab the plates filled with tasty tidbits, we sampled most everything. Everything included the BBQ offerings of about 25 chefs. This was no ordinary barbecue as you can see below [...]

South Beach (SOBE) Wine & Food Festival After Parties…

After nibbling the scrumptious morsels served at the Bubble Q, off we went to eat and drink some more at an after party in the penthouse of the Raleigh Hotel in honor of Jean-George Vongerichten hosted by Emeril Lagasse and Lee Brian Schrager. The Perrier-Jouët and other libations flowed while we mingled with the hoity toity, food celebrities and more. Ah, the life of a food writer. 1. Me, Jean-George and Restaurant Business's Pat Cobe 2. Emeril and me 3. Travel & Leisure's Ted Lee and me 4. Me and South Beach Festival Director Lee Schrager (no relationship to entrepreneur Ian Schrager) 1. 234

New Amana Jot: Something You Can Draw On

Post your messages to the family on the refrigerator — but not on paper held in place with a magnet. Instead — if you have a new Amana Jot with its dry-erase finish on the door panel — just write that message on the refrigerator door. The fridge comes with a Crayola blue and black marker. And, when the notes (and your kids doodles) are no longer needed -- just wipe them away. Why didn't an appliance manufacturer develop this when my boys were young? Amana Jot refrigerator is now available at retailers across the U.S., with an MSRP of $549.
