ZUPPA FRESCA CHILLED GAZPACHO SOUP

4 heirloom tomatoes
1 c extra virgin olive oil
1 Persian cucumber, diced
½ red onion, diced
2 red bell peppers, diced
2 yellow bell peppers, diced
1 c white wine vinegar
3 cloves garlic
Salt and pepper

Chop all ingredients in food processor. Pass through filter or cheese cloth to remove large food particles. Season with salt and pepper to taste. Serve chilled.
Makes 4 servings.
