Members of Les Dames d’Escoffier New York celebrated Legacy Award winner, Chef Helen Vass, at a dinner earlier this summer at Dame Surbhi Sahni’s Saar Indian Bistro. The Legacy Awards hone the winners’ crafts, stimulate their creativity and encourage these future leaders. The winners earn a mentorship opportunity with key members of LDEI, an organization of women leaders in food, fine beverage and hospitality.
I contacted Dame Surbi Sahni to get the details of what we ate that evening, as we never saw a menu for our multi-course meal. Her special menu started with shakarkandi chaat and murg kesar— smoked sweet potatoes, ginger, green chili and cilantro chutney served with tandoor-cooked chicken marinated in saffron, cardamom and lemon.
Family-style dishes include begun bharta (smoked eggplant, onions, tomatoes, chilis and roti chips); saffron seabass and black pepper chicken; peas upma, mini dosa and coconut chutney; pindi chole and amritsari aloo kulcha (pomegranate and cumin flavored chickpeas, potato-stuffed tandoori bread) Indian street salad and carrot & cauliflower pickle; sarson da saag and makki ki roti (slow-cooked spinach & mustard greens, cornbread) and a cumin lassi shot; crispy okra salad, dal makhani and assorted breads. Dinner ended with chai panna cota – chocolate sauce, tagmo chilli chocolate crackle cookies, cashew sweet.
