On the first night of our Global Palate Adventures trip, after we were settled into our riad, the group had dinner at Le Trou Au Mur, a charming Moroccan restaurant in old town offering a modern-day take on traditional cuisine. Its name translates to “a hole in the wall.”

Everything we tried was worth ordering. My end of the table ordered many dishes that we shared. We started with cherchma, mixed beans and lentils in a Moroccan spiced sauce over whole wheat couscous (75 dirhams, $7.50) and charmoula sardines filled with lightly spiced seasonal vegetables (80 dirhams, $8).

While waiting for our food, we walked up to the roof to glimpse the full moon.

Our entrees included the tender beef tangia (150 dirhams, $15) cooked slowly in an eponymous vessel in low heat in smothering ashes, m’rouzia (165 dirhams, $16.50) slow-cooked beef marinated in ras el hanout, saffron, coriander and honey and tried,  shredded pancakes with lentils and chicken in a saffron herb sauce (165 dirhams, $16.50). Couscous and veggies came with our entrees.

For dessert, we sampled the date and saffron cake, salted caramel and raz el hout ice cream (85 dirhams, $8.50).

I recommend visiting Le Trou Au Mur for an authentic Moroccan meal.
