“Where do I get green apple juice?” asked Arturo Franco-Camacho, as he smiled and sliced a green apple before putting it through a juicer. “Simple!”

The rooftop of Bespoke restaurant was the second stop of the From Iberia to Latin America foodie tour at the Arts & Ideas Festival this past weekend.

If you haven’t yet dined al fresco at Bespoke (266 College Street, New Haven, 203.562.4544), make a plan to do so this summer. It’s up two flights of stairs, but it’s worth the walk – and it’s obviously only open weather permitting.

Tour participants enjoyed Arturo Franco-Camacho’s cooking demonstration of the Apple-Inspired Ceviche — consisting of shrimp, scallops, green apple and citrus juices, jalapeno peppers and coconut milk, trying to take notes on the printed recipe. But in this creative chef’s classic style, he made numerous changes to the recipe as he demoed it.

We sampled not only the ceviche but also a sweet corn arepa topped with pulled pork, avocado and Mexican crema while we sipped a 2006 Riesling from Milbrandt Vineyards (Washington State).  And just as we were about to depart for the last stop of our tour, the wait staff delivered dessert: a creamy chocolate banana semi-fredo with house-made dulce de leche gelato.

The next (and last) stop of the tour: Geronimo.
