Fleisher’s Grass-fed & Organic Meats in Kingston, NY is holding five-day introductory butchery
class this August.
Students, limited to eight per class, will make sausage, cure charcuterie, carve carcasses (pig, chicken, lamb), witness a chicken slaughter, tour a slaughterhouse and learn about sourcing and sustainability, among many other activities. This class will provide students with both hands-on butchery experience, lectures and demo segments from Fleisher’s head butcher Joshua Applestone and former Culinary Institute of America instructor Hans Sebald.

Classes commence on August 1 and August 8. The fee is $2,100 per participant for the classes and a set of knives.
