“Postcards from New York” — that email from my friend Babs described some of her recent food samplings in the city. “Fave Dishes: Pork Bun w/Fried Egg at Milk Bar” caught my eye, as I can walk to Momofuku Bakery & Milk Bar (corner of 12th and Second) when I’m staying in Manhattan.
She wrote: “Everyone knows how fab the pork buns are at momofuku but possibly even better are these pork buns with the deep fried egg that oozes over the fab pork in the bun -just amazingly yummy.”
I had to try it. Their steamed bun brims with slices of pork belly, thinly sliced cucumbers, a fried egg all seasoned with hoisin sauce and scallions. I learned that the restaurant slow roasted the pork belly for 6 hours until slightly caramelized, first seasoning it with salt, black pepper and sugar; the cukes were cured in sugar and salt and the egg was poached first, dusted with Wondra flour, and then deep fried. A soul satisfying snack. The Pork Bun with fried egg ($9) is served only until 5 pm.
