Michel Nischan is a man of few words, yet lots of action.

This two-time James Beard Foundation award winner is Founder, President and CEO of Wholesome Wave, Co-Founder of the Chefs Action Network, as well as Founder and Partner with the late actor Paul Newman of the recently closed Dressing Room restaurant in Westport, CT.

A son of farmers who lost their land with the onset of large-scale agricultural practices, Nischan grew up with a deep appreciation for sustainable agriculture and those who work the land.

His organization Wholesome Wave  advocates for a healthful, equitable, and more sustainable food system in underserved urban and rural communities. Introducing that organizations’ Double Value Coupon to Washington decision makers was influential in the recently passed Federal Farm Bill’s language supporting the doubling of food stamps used to purchase fruits and vegetables at farm-to-retail outlets like farmers markets.

Which specific food product, ingredient or gadget would you never give up?  A sharp knife. If you have a good one, there are very few other gadgets you need. After that, a microplane.

What do you like to serve when you entertain? Missouri-style salt and pepper ribs with a dry Riesling.

If you got to choose what you ate… describe your “last meal?” Fried chicken and dumplings.

What food is your secret guilty pleasure?  French fries.

What is your go-to, neighborhood restaurant?  The Old Bluebird Inn (363 Black Rock Tpke)  in Easton, CT.

What is one food product most people don’t know about, but should…?   Anything that is fresh, but change it to locally grown.

Describe your worst kitchen disaster and how (if possible) you saved it. I spoiled 200 ducks by turning off the walk-in cooler fan while cleaning the cooler. Never turned it back on and there was no saving anything.

Who was your most influential mentor? Jacques Pepin.
