Bijou (French for jewel) is a fresh-ripened artisanal goat cheese made in the style of the French “crottin”. This tasty nugget has the sweetness of a fresh cheese with notes of yeast on the rind. As the cheese ages it gets soft and creamy. Serve it toasted on a baguette on top of salad greens for a light entree.
