Hu Kitchen — which opened on Union Square last month — is the result of Jordan Brown reading The UltraMind Solution by Mark Hyman and changing the way he ate.

Jordan eats clean, unprocessed food.  “It’s a more primal way of eating  as the human is a primitive body in modern times,” explained Jason, who considers himself an ingredient blood hound.

Hu Kitchen’s food has no GMOs and no cane sugar; they only sweeten with organic coconut sugar, unfiltered honey and maple syrup.  All their meat is fed natural diets, vegetables are organic and they make their own condiments,  nut milks and even chocolate (made with only cacao and organic coconut sugar)

I was literally one of the first people in the door as they opened  for business and ran into Jason. On his suggestion, I ordered a bowl of their Lentil Berkshire Bacon soup – using their house made bacon made with maple sugar, sea salt and hickory wood.   It was disappointingly under-seasoned and not hot at all. I would have taken it back, but had settled in upstairs overlooking the service area and was too lazy to go down!

To be fair, I will give them a chance to work out their kinks and go sample again!
