My dear friend Claire Criscuolo called one weekend morning when I was packing to move asking me to meet downtown New Haven at her eponymous vegetarian restaurant — now in its 39th year — for breakfast. How could I resist?

Lucky me and two other of Claire’s girlfriends as we sampled lots of her organic, vegetarian, homemade breakfast offerings.

I selected my favorite huevos rancheros ($11.50) that included organic eggs, corn chips, housemade refried pinto beans, caramelized onions and guacamole — that Claire said is made fresh twice a day. And of course salsa, made from her recipe that hasn’t changed since she opened!

Claire wanted their whole-grain vegan pancakes (three large ones for $10.45) that have a little flax added to the King Arthur organic flour base, served with real maple syrup.  She explained that you can order them topped with sautéed organic bananas, apples or mango … or whatever fruit’s on hand that day.

Others ordered French toast made using their homemade multi-grain bread, organic eggs, milk and cinnamon topped with sautéed bananas and  accompanied by pure maple syrup ($10.45).

We all sampled her yogurt parfait (a full serving is $6.50) made with plain homemade organic yogurt, blueberries, strawberries or whatever organic fruits they have on hand and homemade granola.

Also tasty are her eggs Florentine consisting of organic sautéed spinach, poached eggs, an English muffin and Swiss cheese all in a light cream sauce, served with roasted potatoes and orange slices (organic of course, $10.45). And the Sydney sunrise consisting of Tofrucky sausage, avocado and a chili spread on toasted muti-grain organic bread ($7).

I highly recommend breakfast at Claire’s
